Many sauerkrauts on the market are not fermented; instead they are pickled using white vinegar. Some are fermented but pasteurized, removing many benefits from active cultures. Even those containing active cultures often have limited diversity in beneficial bacterial species, reducing their probiotic effects.
My sauerkraut is lactic acid fermented using an heirloom Greek yogurt starter culture. Heirloom cultures have been actively used for fermentation over generations, beginning with a high diversity of beneficial bacteria species and naturally selecting for bacteria that produce superior fermented products.
Due to the active culture nature of this sauerkraut, it has a more limited shelf-life compared to many store-bought products, but refrigeration does preserve the original flavor and texture for 1 – 2 months. Unfortunately, it cannot be preserved by freezing, which would kill the beneficial bacteria.

Jason Wever is the son of Marcia and brother of Justin. He works as a researcher at Washington University, but spends a lot of his free time gardening, preparing food, and fermenting almost anything that can be fermented. He's been selling beef, chicken, and veggie stock for several years. You can often find him working out with Justin in the personal training space or helping with projects around the studio.
